Cheese Omelette
What you'll need:
2 eggs
Pinch of salt
Cheese
Mixed Herbs (if you like them)
How to prepare:
Whisk all ingredients together. Heat frying pan. Add mix. Carefully run a fork over the mix.
Then leave to form.
Take a pallet knife & run around the edges. Then take a fish slice & turn the omelette over.
Add cheese to one half, then fold over.
Serve.

Lentil Soup
What you'll need:
1 onion, diced
3 carrots, diced
1/2 swede, diced (Neep)
200g red lentils
2 ham or vegetable stock pots
How to prepare:
Add all ingredients to a pan.
Cover with water.
Bring to boil.
Simmer for 25/30 minutes. Stirring regularly.
Blitz with a hand-held blender or eat as is

Tattie Soup
What you'll need:
200g potatoes, peeled & diced
1 onion, diced
1/2 swede, grated (Neep)
3 carrots, diced
2 vegetable stock cubes
How to prepare:
Add all ingredients to a pan.
Cover with water.
Bring to boil.
Simmer for 25/30 minutes. Stirring regularly.

Curried Parsnip Soup
What you'll need:
8 parsnips, diced
1 onion
1 tsp very lazy garlic
1 tsp curry powder
2 vegetable stock cubes
1 tbsp oil
How to prepare:
Gently fry oil, onion & garlic in a saucepan for 5 mins. Add curry powder.
Add parsnips.
Cover with water.
Bring to boil, then simmer for 15/20 minutes.
Blitz with a hand-held blender

Poached eggs, black pudding & toast
What you'll need:
2 eggs
Splash of vinegar
2 slices of black pudding
2 slices of toast
How to prepare:
½ fill a saucepan with water, add a splash of vinegar. Bring to boil.
Carefully drop 2 eggs in separately. Soft poached will take about 6 minutes.
Black pudding can be cooked at 180 degrees in an air fryer or in a grill. Air fryer will only take about 6-8 mins.
Serve on toast.

Cheesy Pasta
What you'll need:
250g macaroni
1 tablespoon butter
1 tablespoon plain flour
450ml milk
Cheddar cheese, grated
Pinch of salt
1 teaspoon mustard
How to prepare:
Cook the macaroni according to the packet instructions. Drain when cooked.
Heat the butter, when melted, add the plain flour, and mix in. Add the salt & mustard. Cook on a low heat, stirring all the time for about 30 to 60 seconds. Add the milk a little at a time and mix well with a whisk. You should end up using all the milk.
Bring to the boil, stirring all the time, to thicken the sauce, then add the cheese.
Add the pasta.
